Blueberry Muffins Recipe

If you’ve been following me for a while you’ll know that I’ve introduced BAKING into my life as it is so therapeutic & everyone around me has been loving the goodies I’ve been making.

Below is the recipe from Betty Crocker’s Blue Berry Muffins

You will need:

  • Betty Crocker Blueberry Muffin Mix
  • 1 egg
  • 180ml water

Let’s Get Started:

  1. Preheat oven to 180 degrees then put the mix, egg & water into a mixing bowl & mix away.
  2. When the mixture has all combined & is a smooth consistency, start filling your muffin patties 1/3 to the top.
  3. Pop in the oven for 15-20 mins (My trick it to keep an eye on them at 15 mins as you don’t want them to get dry, take them out when the top of the muffin springs back)
  4. Once they are ready, pop them onto a cooling rack & let them cool.

This is so easy & simple, & EVERYONE WILL LOVE THEM!

Once they were cooled, I ate 3 straight away 😛

Hope everyone is having a beautiful Tuesday (It’s Tuesday here in Sydney, Australia). I spent my Sunday afternoon doing some baking, I love baking! It is so therapeutic. Below is the recipe that I used ❤

You will need:

Cupcake Mix:

  • 2 eggs
  • 1/2 cup of milk
  • 3 tablespoons of soft butter

Icing Mix:

  • img_38523 tablespoons of soft butter

Method:

  1. Preheat oven to 180 degrees, set up your 12 patty cases on to a baking tray.
  2. Place cupcake mix, eggs, milk & butter to a bowl & mix w/ a wooden spoon, mix until you have a smooth consistency.
  3. Place a batter into patty cases (I chose to put them half way to ensure they don’t overflow in the oven)
  4. Bake for 20-25 mins (You want to keep an eye on these bc if you over cook them, they will become dry)
  5. Once they have cook, leave them on a cooling rack for approx 15 mins.
  6. Add your butter to the icing mix & start mixing till you have a smooth consistency, then pour over your cupcakes (I didn’t like the colour of the icing so I added a few drops of pink food colouring to change the colour)
  7. ENJOY 🙂

100th Blog Post & Big News To Share!

My blogs have finally reached a 3-digit number! I cannot believe it!

100 blogs in just under a year & to think that I even took a fair few months off at the start of this blog journey due to doubting myself, thinking my blog wasn’t good enough etc.

So, I have some great news that I would love to share with you all.

I have decided to remove the ‘wordpress’ from my URL 

I think it’s time for the word ‘wordpress’ to be removed. Discovering Your Happiness has come such a long way & I think as a ONE YEAR ANNIVERSARY present to my blog is to remove the wordpress name from my URL.

^ I am so excited to be sharing this big news with you all.

I am so grateful for how far I have come & how far my blog has come. *pats self on the back*

We are so quick to criticise ourselves, which is extremely unhealthy for us both physically & mentally however we never quick to pat ourselves on the back & praise ourselves.

So here I am patting myself on the back for all my hard work & consistency… Look where I am now.
